Fresh Basil Caprese Chicken
Yields 4 Servings
- 4 Fresh Boneless Skinless Chicken Breast
- 1 Large Slicing Tomato (Sliced)
- 1pk Fresh Basil (Whole)
- 1pk Fresh Sliced Mozzarella
- 1/2 cup Balsamic Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
In a medium size skillet heat 2 Tablespoons of Extra Virgin Olive Oil to medium high heat
Add 4 pieces of Fresh Boneless Skinless Chicken Breast to skillet cook on medium high heat for 5 minutes
Turn Meat over and cook an additional 3-4 minutes
Turn Heat to Medium low
While in pan top each Chicken Breast (in order) with 1 teaspoon Pesto Sauce, 1 Tomato Slice, 2 Basil Leaves, 1 Mozzarella Slice, 1 teaspoon pesto, and 1 Basil Leaf
Drizzle Generously with Balsamic Vinegar.
Cover and heat for 3 minutes or until Mozzarella begins to melt.
If you find it difficult to transfer the chicken without it falling apart, use a wooden toothpick to hold stack together. Also, the leftover basil, tomato and Balsamic Vinegar can be paired with Romaine lettuce for an excellent side salad.
